But the bag I just got are behaving quite differently — they are puffing up huge in the toaster like a baked good, then deflating while they cool, which leaves them with not the best texture.

These ones are very similar to Bare and actually real chicken pieces. Anything that says "shaped" means it's extruded chicken goo. I don't think I had these exact ones but I got the Perdue shaped chicken tenders once by accident and they tasted awful in comparison and overly salty (even the good ones have high sodium though).

All an air fryer is is a small convection oven. These nuggets are already pretty oily. I don't think they need the extra spritz. (Though I agree, that is often the solution.) If you put a wire rack on top of your cookie sheet, then put the nuggets on the rack, they should turn out a little crispier.
