Preheat the oven to 350 degrees. Step 2. Prepare the Baking Dish. Because this recipe makes 10 enchiladas, we will need two baking dishes. Spray a 9×13-inch glass baking dish and then a smaller 8×8-inch square baking dish with your favorite cooking spray or oil. You can use any kind of baking pan you have.

Directions. Cook chicken with taco seasoning. In the meantime chop up onion. When chicken is cooked, shred with a fork and set aside. Heat up tortillas anddip in enchilada sauce. Then place a small amount of chicken, onion and cheese then roll up. Place in a baking dish and top with a little cheese and bake for 10-15 minutes at 325 degrees.

1 large can enchilada sauce (La Victoria is my favorite) 3 cups shredded cheese (I use mexican blend, or a combo of cheddar cheese and monterey jack cheese) 10-16 flour tortillas (8-9" work great. you can even use corn tortillas) 1 Tablespoon olive oil; salt and pepper (to taste, optional) Directions. Preheat oven to 350ºF.

Pour the entire jar of salsa on top then place the lid on. Cook for 2-3 hours, or until you reach an internal temperature of 165F/74C. When chicken is fully cooked use two forks to pull the chicken apart. Mix the sauce into the pulled chicken, serve immediately or turn to the keep warm setting.

Instructions. Preheat Oven to 350. Spread 2 tablespoons of enchilada sauce over the entire bottom of a 13 x 9 casserole pan. In a medium bowl, combine the shredded chicken, 1/2 of the sauce, about a cup and a half of sour cream (give or take, depending on how creamy you want them) and 2-3 cups of cheese.

Preheat oven to 350 degrees. Spray 9×13 casserole dish with Pam Nonstick Cooking Spray. Add Oil, Ground Beef, and Chopped Onions to frying pan. Brown beef / grill onions in frying pan. Drain juices from meat and stir in 1/3 cup water mixed with 1 serving Homemade Taco Seasoning.

Step 4. Transfer the chiles and garlic over to a blender, pour in some water and vinegar, and let it sit for 5 minutes so they soften. Now, purée on high for 10-20 seconds before switching to low speed and pouring the remaining vegetable oil in a slow and steady stream.

Transfer chiles and garlic to a high-speed blender. Pour in the water and vinegar, and let stand for 5 minutes to soften. Purée on high, 10 to 20 seconds. Turn to low speed and slowly add remaining vegetable oil in a slow and steady stream so the oil mixture will emulsify, creating desired creamy consistency.

Cut pork into 1/2-inch cubes; season cubes with salt and pepper. In a large, heavy pan with lid, brown the cubes well in oil and melted butter. Add the onion and garlic and sauté for about 5 minutes, then drain the fat from the pan. Add the remaining ingredients, cover, and simmer for at least 90 minutes, stirring frequently; add more water.

Spray a 9×13-inch baking dish and an 8×8-inch baking dish with cooking spray. Fold the right side of the tortilla halfway over to cover the browned ground beef, diced green chiles, and cheese. Then fold the left side over the top of the right side. Place the folded tortilla in the baking dish folded side down.

Add a thin layer of the green sauce to the baking dish, just enough to coat the bottom. Fill each tortilla with around ⅓ cup of the chicken mixture, then roll the tortilla up and place in the baking dish with the seam-side down. Repeat with the remaining tortillas. Pour the remaining enchilada sauce over top of the enchiladas.
