Imho, even though Ezio's outfit in Revelations was great, the dyes were the worst. Why did they remove the 'Wetlands Ebony' dye? I played AC2 and ACB with it, AC3 with New York's outfit (the black and red one), AC4 with Pirate Captain outfit.

In AC2, I used Wetland Ebony, then in Brotherhood, it was Florentine Scarlet. Masyaf White was my choice for Revelations. All the dyes I used seem to fit the best with the story, from my perspective.

I agree, the Master Assassin's Armour should definitely be dye-able. Aesthetics matter to players like me. Since completing the game I've been playing with no armour equipped at all, so that I can enjoy dying Ezio's clothes to the fullest.
