Last updated November 30, 2021. Rhubarb finally made an appearance at my local co-op. It's ruby red stalks called to both me and the puff pastry tucked away in my freezer, so I took it home with me and set to work. I had this rhubarb tart recipe in mind, and didn't change anything except to stir some raspberry jam into the crème fraîche.

To make the rhubarb topping (make ahead about an hour, if possible): Bring the 2 cups of sugar and 1 1/2 cups of water to a gentle boil until the sugar is dissolved. Add the lemon, vanilla extract, and rhubarb and bring to a low boil. Cover and remove from heat for 20 minutes.

PREPARING THE FILLING AND THE PUFF PASTRY. Begin by preheating your oven to 400 degrees F. Line a large baking sheet with a silicone liner or parchment paper. Set aside. Beat together the cream cheese, sugar, one large egg, and vanilla extract until smooth and creamy.
