In a large pot over medium heat, bring water to a boil. Add fish sauce. Add kamias, onions, tomatoes, and chili pepper. Cook for about 1 to 2 minutes. Add radish and cook for about 1 to 2 minutes. Add long beans, eggplant, and okra and continue to cook for 2 to 3 minutes.

Simmer for 5 minutes or until white radish is just half cooked. Add the Salmon head, eggplant, okra, and green chili peppers. Pour in tamarind mix and fish sauce and gently stir to avoid breaking the fish into pieces. Simmer for 5 minutes or until fish is cooked. When vegetables are tender yet crisp, add salmon and continue to cook for about 5 to 7 minutes or until fish changes color and flakes easily.

Cover and let it come to a boil. Add the radish and taro, then simmer over medium heat for about 10 minutes. Add the salmon, chili pepper, and eggplant, then continue to simmer for another 5 minutes. Season with fish sauce or salt, if necessary. Add the sitaw and kangkong, then let it cook for another 1-2 minutes.

Remove the pot from the heat. Taste the soup and add more calamansi juice (or lemon juice, if using) if more sourness is.

To make this Sinigang, pour water into a pot over medium-high heat to boiling. Gently add onions, tomatoes, ginger, legumes, and white radish, then cover the lid of the pot.
