Hanger steak is a lean, tender cut of meat that comes from the diaphragm muscle of the cow. It is also known as butcher's steak or hanging tender. Hanger steak can be grilled, roasted, or braised. However, the best way to cook hanger steak is to smoke it. Smoking hanger steak gives it a rich, smoky flavor.
